A delicious Katsu curry recipe that's so good, you'll want it all to yourself! Featuring crispy fried pork katsu served with a rich and savory Japanese curry.
For the Curry: Sauté the sliced onions and chopped carrots until softened. Add the dashi stock (or chicken stock) and bring to a simmer. Dissolve the curry cubes in the simmering liquid and cook until thickened.
For the Katsu: Pound a pork chop to 1cm thick and season with salt. Bread the pork chop by first coating it in plain flour, then dipping it in an egg wash, and finally coating it generously with panko bread crumbs. Fry the breaded pork chop at 350F for 2 minutes on each side until golden brown and cooked through. Serve the Katsu with the curry.
